Casa Los Frailes, Garnacha Tintorera “Rubificado”, Valencia, Spain 2016[biodynamic] 100% Alicante Bouschet (Garnacha Tintorera) SLOE BERRY, RASPBERRY, BLACK PEPPER, INDIA INK, CITRUS This single parcel wine is from a vineyard site called “La Casa de Aperos” (House of Tools). Here the black juiced Tintorera grape brings juicy brightness from a soil deeply reddened by natural oxidized iron deposits. Following the heritage of the monastery that originally planted this vineyard, this wine is made using their original 13th century fermentation amphorae. Serving Suggestion: Whole hog pork cooked slowly over a wood fire. Instead of any barbecue sauce, lightly spritz with lemon juice and sprinkle with sea salt.
