With Dexter Lake, rockstar winemaker Matthew Rorick’s goal is to showcase lesser known varietals while using minimalistic techniques. For Blondini, this means hand-picking a blend of Verdejo, Picpoul, and Albariño grapes and whole-cluster pressing them. They are then fermented with indigenous yeast in neutral oak, aged two years on the lees then bottled without fining or filtration. So what does that actually mean? It means you get a wine that is unadulterated and full of tropical freshness. Blondini is a great introduction to what the world of natural wine has to offer.

Serving Suggestions: Moules frites (steamed mussel w/ shoestring fries) smothered in a garlic-parsley butter sauce.
