2013 Cabernet Sauvignon "Estate" (Xabregas)
Xabregas Estate, Cabernet Sauvignon "Estate", Mount Barker, Western Australia, 2013100% Cabernet Sauvignon BLACKBERRY. VIOLETS & MINT. LICORICE. BAKING CHOCOLATE. Mount Barker is renowned for having some of the oldest vines in Australia’s Great Southern, and this wonderful Cabernet Sauvignon shows it. The cooler climate and varying terroir throughout the region allows for extremely, expressive wines. Well-integrated tannins create a structured wine with great length, all the while allowing for a full-bodied Cab, more reminiscent of Bordeaux than Napa. Spending 20 months in French Oak, you’re able to see just how much they regard their French counterparts. They say imitation is the best form of flattery. We just think Western Australia was taking notes in class while studying their Western winemaking friends. Serving Suggestion: Peppered Flank Steak w/ capers & fingerling potatoes. French Dip Sandwich Au Jus.
