Sauternes is part of Bordeaux, where white wine grapes are infected with the “noble rot.” This mold concentrates flavor by sucking out the water and leaving the sugars. The wine is golden nectar. With a thick body, dense and rich flavors, Sauternes is magical because of the balance maintained between sugar and acid. Coconut, orange peel, and caramel flavors are waiting to be enjoyed. Serving Suggestion: As a dessert on its own, or with white cake and fruit based desserts and finally, classically served as with Foie Gras appetizers.
