PEACH BLOSSOM & STRAWBERRY, TONGUE-TINGLING, ZESTY MINERAL

Grolleau Gris is the lighter skinned, pink-ish variant of a once-ubiquitous Loire grape responsible for an ocean's worth of crisp rosés and light-bodied reds. We don’t encounter Grolleau-based wines as much as we once did, and Grolleau Gris is an outright rarity! Thankfully, this rendition from Jérome Choblet, while made in very limited quantities, makes up for all the years that we didn’t know we were missing the variety. Hailing from the Atlantic reaches of the Loire’s Muscadet country, this not-quite-effervescent white tingles with mouthwatering acidity, summery fruit, and that spirit of adventure that can only come from drinking wine made from exotic grapes. Serving Suggestion: Maki sushi w/ snapper, salmon, pickled plum, & cucumber. Vegetarian bibimbap (and other lighter, medium-spicy Korean dishes).

TART CHERRY & GOJI BERRY, PALATE-PLEASING (& TEASING!) ACIDITY

To look at Portugal’s Lisboa on a map, one would understandably envision it as probably hot and best suited to dense, extracted reds like the ones associated with many similarly southerly Iberian regions. The reality is astonishingly mild – conducive less to unwieldily powerhouse wines than to elegance and balance. The Sant’Ana estate is very small (less than 20 acres!) and lovingly manages its vineyards to impressive effect. This Rosé, while filled with bold red fruit, has a razory precision which jumpstarts the palate, invigorates the appetite, and refreshes the soul. No joke.

Serving Suggestion: Spicy stewed eggplant w/ tomato, sesame seeds, & chili garlic paste (don’t get to crazy w/ the heat). Stir-fried salt cod w/ onions, egg batter, rice, & olives.

JUICY-TART PLUM & GRENADINE, BLOSSOMY FRESHNESS

While this rosy refresher comes to us from the lakeside land of Muscadet, it features a variety best known for its rosé work in the Middle-Loire’s Anjou. This, however, is quite different from the fleshier, classically less-dry rosés from the Loire lore of yore. At a thirst-quenchingly meager 11.5% alcohol and teaming with tongue-tingling acidity, this pretty pink is practically the promised land of rosé refreshment.

Serving Suggestion: Mac & cheese-style cauliflower casserole w/ blistered green beens & garlic-miso sauce. "General Tso’s" fried tofu w/ lo mein & baby corn.
