Chateau Peybrun, Cadillac, Bordeaux, France 2011

{sustainable} 80% Semillon, 10% Sauvignon Blanc, 10% Muscadelle

MOUTHWATERING PEACH & APRICOT, ORANGE MARMALADE, SWEET SPICES

Chateau Peybrun, located in Cadillac on Bordeaux's Left Bank, has been making very high quality sweet and red wines for centuries. The satisfying sweetness, reminiscent of golden raisins, is balanced by tongue-tingling acidity and a silky body.

2010 Recioto di Soave Classico "Costeggiola" [375ml] (Guerrieri-Rizzardi)

Guerrieri-Rizzard, Recioto di Soave Classico "Costeggiola" [375ml], Veneto, Italy, 2010

100% Garganega

CARAMEL, SPICE, DRIED FRUIT AND NUTS

Friends, Romans, and countrymen all agree, this is the product of good ears ("recie" in the local dialect) - the top-most, most sun-ripened grapes on the bunch, which are then dried in the sun until their juice is concentrated and powerful; on such a full sea we are now afloat, redolent of caramel, brown sugar, and spice, with golden raisins, dried orange peel & a touch of ginger. Rich sweetness gives way to pleasant, palate-cleansing acidity. The inevitable end to a meal is dessert, and this is a dessert wine fit for the gods.

Serving Suggestion: Simple, not-very-sweet cookies like shortbread or biscotti, dunked into the wine. Use as part of a zabaglione - a light whipped custard - and pour over fresh berries. By itself, sipped slowly, sitting outside under the faultless stars.

2013 Riesling Auslese "Mettenheimer Schlossberg" [375ml] (Schafer)

Schafer, Riesling Auslese "Mettenheimer Schlossberg [375ml], Mettenheim, Rheinhessen, Germany 2013

100% Riesling

HONEY, FLORAL, APRICOT & PINEAPPLE.

Volker Schäfer is the winemaker at Schäfer estate, which dates back to 1709. This lovely Riesling produced in a sweeter style is amazing to drink. Ripe and ready to go, this is a dessert wine for those who want the classic German-style dessert experience. Closer in style to a beerenauslese, the body and acidity balance this wine perfectly so it can be served as an aperitif or especially as a dessert wine.

Serving Suggestion: Excellent with mousse paté or foie gras. Also great with tart apple pie with a bruléed crust.

2011 Sauternes [375ml] (Vincent, Chateau St.)

Chateau St. Vincent, Sauternes [375ml], Bordeaux, France 2010

{organic} 80% Semillon, 10% Sauvignon Blanc, 10% Muscadelle

APRICOT & CLEMENTINE, HONEY, SPICE & WHITE TRUFFLE

Not just any mold, botrytis is a truly noble rot which contributes its fuzzy charm to the exteriors of late-harvested grapes destined for the world's most celebrated dessert wines. Sauternes, a southerly enclave of Bordeaux, is arguably the capital of this unexpected but beautiful phenomenon. The traditional Sémillon, Muscadelle, and Sauvignon Blanc grapes are concentrated by the fungus's leeching out of moisture from the grapes (a process which does nothing to endanger the health of the vines) into a decadent, nectary elixir which fermentation transforms into a decadent dessert wine (albeit one which is often not served with dessert).

Serving Suggestion: Often served w/ savory hedonistic fare such as patés & decadent cheeses. Japanese sun-dried persimmons & other sweet, shriveled fruits.

2007 Trockenbeerenauslese "Grand Cuvee" [375ml] (Steindorfer)

Steindorfer, Trockenbeerenauslese (TBA) "Grand Cuvée, Burgenland, Austria 2007 [375ml bottle]

60% Chardonnay, 40% Pinot Gris

LIQUID GOLD, ETHEREAL & SPECTACULAR

With Trockenbeerenauslese, the grapes shrivel and dry on the vine, and are harvested at the latest possible moment. The tiny amount of juice that can be pressed out of these little golden raisins is ridiculously concentrated with soaring sugar levels. This elixir is then fermented into what can only be described as ecstasy in a bottle. Insanely complex flavors of honey, spice, and tropical fruit float over the tongue in moan-inducing waves. Don't drink this standing up; your knees will get weak.

Serving Suggestion: Drink on it's own after a fabulous dinner, as a prelude and abettor to erotic dreams.
