The Friulano grape's Bordelais origins are belied by its contemporary northeastern Italian name, but this signature specialty of Friuli and neighboring Slovenia has recently found the appreciation of a wider audience than ever before. Brimming with flavors that find their balance happily between the familiar and the exotic, this interesting alternative to more robust examples of Pinot Grigio features an additional apple skin astringency and almond-like waxiness which are delightfully food-friendly and suggest savoriness. The rolling Andrea Visintini estate is a small, scenic collection of 25 hectares straddling Friuli's Colli Orientali, Collio, and Grave DOCs.

Serving Suggestion: Omelet (for dinner!) w/ smoked salmon & ricotta. Risotto w/ baby asparagus. Sushi of a fusion and/or rainbow roll variety (don't skimp on the eel, avocado, tempura, or cream cheese).

TART APRICOT & PEAR SKIN, EARTHY HONEY & PINENUT

This is classic, unfiltered, uncensored orange wine – the centuries-old style that eccentric winemakers on both sides of the Italian/Slovenian border have turned into a cult sensation. Often talked about but rarely seen, these are made from white grapes and treated to extended skin contact. This process is an integral part of red wine production, but white winemaking seldom involves skins once grapes are crushed. Two months of fermentation by wild yeast in both steel and oak accentuates exotic honeyed aromas and a rich, slightly tannic mouthfeel. 

Serving Suggestion:  Franco Terpin's side project is making salamis and pancetta the size of your leg, so let this spirit be your guide in choosing the accompaniment.
