FLORAL, GRAPEFRUIT & PEACH SKIN. VERY DRY.

Fresh, crisp, dry and clean, this white is made from Rolle, a grape varietal that’s obscure to most Americans, but essential in southern France and even southern Italy were it’s known as Vermentino. Considered to be one of the greatest white wines with seafood (especially Bouillabaisse), Rolle has sauvignon blanc-like tendencies but is less overpowering while still keeping a nice dry edge. Another of our favorites from the great organic vineyard Domaine de Pinchinat in Provence.

Serving Suggestions: An awesome match with bouillabaisse or fruits de mer, but any garlicky seafood dish loves this wine.

Winegrower Giorgio Alpiste names his wines after the parcel of land on which the grapes are grown. In the case of "Quattro 20 (Venti)" (or "four winds") his Favorita vines flourish on the sandy, south-facing slopes of his family's farm in the Piemonte town of Mango, where refracted sunlight from the Ligurian Sea accentuates the grape's natural minerality and slightly sharp acidic finish. This makes it a fantastic wine to pair with rich cheeses and pasta dishes dressed with butter and herbs.

Serving Suggestions: Tajarin (hearty egg yolk pasta) with butter, sage, and white truffles, or baked trout with lemon and tarragon.

Maremma, Tuscany's coastal frontier, is home to some of the region's most dynamic wines. While the nearby appellations of Montalcino and Montepulciano cemented their identities long ago, Maremma has been working overtime to combine conventional wisdom with innovation. Here, the Vermentino grape shows its mediterranean colors with bright acidity, white peach and citrus, and a an insistent minerality which adds vibrant focus. The Pellegrini family has cultivated Vermentino for generations and made it something of a specialty alongside its better-known reds.

Serving Suggestion: Steamed mussels with garlic, flat leaf parsley, and a nice squeeze of lemon. Spider rolls (tempura soft-shelled crab) with crisp asparagus.
