Though this cuvée from our friends, Céline & Laurent Tripoz, may take its name from the fact that it sees a short period of oak aging in a combination of new and older barrels, oak is far from this gorgeous white's foremost defining characteristic. Brimming with a waxy yeastiness that resembles that of some champagne and a winning combination of golden apple and tangy tropical fruit, this classical southern white Burgundy allows its time in oak to reveal itself as a delectable toasty spice that is as subtle and as integrated as it is sumptuous.

Serving Suggestion: Panfried trout in a buttery white burgundy sauce w/ pickled white asparagus salad. Chanterelle quiche w/ dill & mustard.

Paraiso is a reference to "paradise" and one sip will take you there. This Smith family are multi-generation grape growers and wine makers in Monterey. This is a full-bodied white with a rich mouth feel and intensely concentrated apple, pear and pineapple flavors. The toasty oak is lighter than previous vintages, but still part of the blend and just enough butteriness to round out the finish.

Mature, elegant Chardonnay is something that gets us really excited. Really, quite, very excited.  Unfortunately, few Chardonnays are built to age gracefully, and those that are tend to be prohibitively pricey, but after six years of bottle aging, Belle Pente's Chardonnay is still drinking beautifully.  In one local touch you won't often see, Belle Pente uses 50% homegrown Oregon oak, in addition to 50% French oak.  Despite what sounds like a lot of oak from all over, the wine is not too oaky, since only 10-15% of the barrels are new. Harvesting in two waves gives the wine a perfect balance between rich ripeness and fresh brightness.

Serving Suggestion: Creamy homemade mac and cheese w/ Firsthand Foods Country Breakfast sausage crumbles. Carrot salad w/ lemon-Dijon vinaigrette.

Small production & delicious, 15% of it is aged in new French & American oak barrels, unlike nearly all other Chardonnays in this price range which are soaked in oak chips, oak powder and even liquid oak. This is the good stuff at the right price!

Former firefighter Cecil DeLoach made his name with some of California’s most popular Chardonnay’s in the 1990s, before selling his eponymous brand to focus on his Hook & Ladder project, so its no surprise he hasn't forgotten how to make Chardonnay party like it's 1999.

We’ve long been ardent admirers of Melville’s large-and-in-charge leaning Pinot Noirs, the estate’s “Clone 76-Inox” Chardonnay, in some ways, runs parallel in style. Both grapes are natives of France’s Burgundy, and Melville manages to pay homage to their origins while harnessing the potential for power and additional richness offered by the climate of Santa Rita’s hills. This offering has, with intent, one foot planted firmly in the stylings of Chablis, but at 14% alcohol, there’s an undeniable weight and ripeness-induced tropicality that’s all its own. This Meliville is a great white whale of a Chardonnay.

Like most things that are obnoxiously described as a “poor man’s” version of something else (in this case Pouilly-Fuissé), there’s a lot to be said for Saint-Véran and why it reminds the world of its more famous neighbor. That said, this offering from Clos Noly has been treated quite differently from the estate’s chiseled Pouilly-Fuissé. Instead, it’s fleshy, round, and tastefully infused with rich, creamy oak. You won’t mistake it for Californian, but it may help bridge the gap between lovers of oak and those who prefer their Burgundies brighter.

Recently transitioned to biodynamic farming from organic, this 4th generation tiny estate makes truly amazing white Burgundy from chardonnay vines up to 90 years old. Robert Dananchet and his son Benjamin are making rich but balanced wines from southern Burgundy’s best up-and-coming appellation, Viré-Clessé. Aged in 3000 liter tuns, the wine picks up a subtle oak hint, but the minerally fruit is really the focus. Highly recommended!

Serving Suggestion: Rich enough for pork chops, but classically suited for fresh fish with a cream sauce. Also, a fresh chevre salad with walnuts, avocado and tangerine slices.
