Cabernet Franc is a key player in illustrious Bordeaux blends like Saint-Emilion, and the solo star of the Middle Loire in villages like Chinon and Saumur as well as the less famous Anjou Rouge. Lighter and brighter than their more complex and expensive neighbors, these wines often fall into a fun category the French call “vins de soif.” Literally translated “wines of thirst,” these are the bottles whose sublime simplicity keeps you reaching across the table for another pour all night long. Phillipe and Sylvie Cady’s Anjou Rouge is translucently ruby with Cabernet Franc's telltale savory herb character and tangy cherry notes keep you refreshed. You can even throw a slight chill on this one in the heat of the summer. 

Serving Suggestion: Think of drinking this by the carafe outside a cafe, w/ a fresh baguette & a spread of cheese & cornichons.

Sloping toward the largest and deepest of the Finger Lakes, the vines at Ravines take full advantage of the heat radiating from Seneca Lake to develop wholesome ripeness in their grapes and the cool night air to preserve acidity. Couple the low and slow rearing of the vines with a minimally interventionist approach in the winery, and you get a New York wine with an abundance of Old World Cab Franc character – leafy, autumnal underbrush, mild cherry & raspberry fruit, and gentle tannin on an elegant, medium-weight frame.

The Pescarmona sisters are the third generation of their family to farm Lagarde, an estate established in 1897. While Malbec and Cabernet Sauvignon are the money-makers in Argentina, the adventurous Pescarmonas are known for their wide array of planted varieties. Cabernet Franc is best known for the peppery green flavors it exudes in the Middle Loire, but this example leans more towards Bordeaux's St Emilion or old-school, cooler-climate Napa Cabernet Sauvignon with its medium body and gentle red fruit accented by savory herbs.

Serving Suggestion: Peppery pork loin w/ thyme. Baked onions w/ sage, melted gruyere, & dill.

The Gouron family has farmed their estate for five generations in the region of Chinon. The unique gravelly- sloped soils are key to the structure they get from the vines. This cuvée called "Terroir" reflects this gravel and the 50- year old vines planted there. More Pinot Noir-esque in style, the Cabernet Franc here is wide open with a knife edge balance of fruit and acidity from start to finish. Supple and ripe, the finish is pure black tea and red berry fruit. No oak in this cuvée.

Serving Suggestion: A match for seared duck breast with savory thyme and blackberry sauce; or beef tenderloin with sautéed smoked bacon and mushroom topping.

This exemplary Cabernet Franc offers us a one-sip-away view into an enchanted, autumnal forest. Bonnelière’s Marc Plouzeau has a wealth of varied terroir occupied by Cabernet Franc vines and Sauvignon blanc vines ranging in age from 30 to 200 years! Having taken over production from his father, Pierre, at the turn of the millennium, he’s established this cuvée from some of his younger vines. Lively and lushly perfumed, it generously serves up tangy, almost wild berryish brightness and an herbaceous perfume interwoven with velvety juniper.  “Vive Chinon,” indeed!

The cave for aging their wines is dug into a hillside and extends several hundred meters, providing perfect temperatures.
