All profits of this wine at Stolpman go to their full-time vineyard crew.

Serving Suggestion: Spicy and sweet Bourbon pepper steak with crispy frites seasoned with rosemary. Silky and rich, this also makes for a cozy and comforting cocktail wine on its own.

"Schäfer" translates from German to "shepherd" in English, so it's only right that this wine is the ultra-rare red sheep. It is flocking delicious! It's wooly, wooly good. All puns aside, this is that rarest of combinations, the highly complex, but enjoyably soft, lightly sweet red. Made in miniscule quantities by Rheinhessen red wine specialist Volker Schäfer, it's especially at home with spicy, rich dishes. But drinking it on its own is also highly recommended.

Serving Suggestions: Lamb vindaloo. 3 alarm chili. Sauteed mushrooms in a sweet Marsala cream sauce.

Red wine from Entre-Deux-Mers is a rare find, and we are lucky to have found an excellent example from Chateau Grand-Portail. Young winemaker Olivier Cailleux grows his Merlot, Cabernet Sauvignon, and Petit Verdot vines on a small individual plot surrounding an old stone cross (a marker along the pilgrimage of Santiago de Compostela) where they benefit from high elevation and generous sun exposure. A palate of plush red berry fruit is backed by mellow tannins and a silky smooth body, resulting in a fresh and friendly style of Bordeaux.

Since 1771, Gasparets has been producing fantastic Corbieres. This is a particularly dark one with sweet red fruit, vanilla, clove and essence of garrigue (wild herbs). The vineyards are way up high and very rocky lending to a style that shows black tar and earth under the fruit. Short time aging in oak barrels adds the smoke; all together you get a dynamic, friendly red with polished fruit and amazing drinkability.

Wicked old-vine Carignan, like 150 year old, is the base of this Corbieres called Mazerac. Martine Pages uses these ancient vines to great effect, polishing their power with slight aging in small barriques. What comes through is a fantastic expression of Carignan, packed with dried black raspberries, garrigue (rosemary, thyme, lavender), and a slightly smoky earthiness. The inky purple color of this wine is backed up with the essence of violets. Her best vintage in a decade!

Serving Suggestion: All grilled meats. It was also delicious with a salad of fresh frisée topped with sautéed chicken livers and gizzards then drizzled with the pan drippings touched with sherry vinegar.

Among these is the 2010 “Dentelle Noire” (black lace), which represents an unusually Syrah-dominant Southern Rhone. Inky and aromatic of black fruit, floral spice, and pepper, this matured red manages to be as compelling as it is commanding. This wine opens magnificently in the glass or decanter to show its best. The similarities don’t end there, however, and there is a density and enveloping blanket of firm yet expansive black fruit that strongly recalls the character of the reds from the Douro region. This outstanding offering comes courtesy of the very first vines that English viticulturist and co-owner James Frost planted when joining his wife at her family’s estate, Quinta de Sant’Ana. The Southern Rhone oscillates around Grenache – particularly gnarly, old Grenache vines. These vines access a kind of underground pipeline, extracting ancient secrets, winding deeper into the sandy-clay soils of the Vacqueyras region. The vines in this particular plot predate the naming of Vacqueyras as an AOC, the winemaker, and even the estate itself! While biodynamically produced and fermented with ambient yeasts, the details of production still pale in comparison to the lush vibrance of ripe red and black fruits as well as the tantalizing warmth of coffee beans and fig. This suppleness is set beautifully against firm tannic structure, bringing us something to consider cellaring. It’s packing enough finesse, though, to be cracked tonight. That’s the point!
