Chateau Grand Portail, Entre-Deux-Mers Haut-Benauge, Bordeaux, France 2016

{sustainable} 70% Sauvignon Blanc, 15% Sauvignon Gris, 15% Semillon

MOUTHWATERING LIME, ZIPPY, LIVELY MINERALITY

From the smale onclave of Haut-Benage, Grand-Portail overlooks the Garonne River from a lofty 100 meters. The young Olivier Cailleux represents the sixth generation of his family to sustainably till the clay and limestone soils here – soils much like those of Sancerre. Perhaps that helps explain why this Sauvignon-based white has a tantalizingly juicy acidity that simply will not quit! It grips the sides of your mouth with a lime-ish zip and won't let go. The finish lasts for minutes...

Serving Suggestion: Anything green or coming from the sea. Maybe the best of both worlds... Salad Niçoise w/ rare tuna, haricot verts, tomato, olives, anchovies, & vinaigrette over some mixed greens.

Cedrick Bardin, Pouilly-Fume, Loire Valley, France 2017

{sustainable} 100% Sauvignon Blanc

grapefruit with flowers, HERBAL, Seashell Mineral

Bardin's vineyards are planted on classic Kimmeridgean marl soils using sustainable agriculture with generations of experience. Could you ask for more from any great Pouilly-Fumé? This classic French Sauvignon Blanc shows the minerality of the Loire coupled with modern winemaking techniques to add fresh flavors, citrus fruit and a racy, long finish. Lightly musky with a full-bodied intensity that is penetrating and long lasting.

Serving Suggestion: PF is fish wine to most, so you are safe there, but venture off to spicy Asian foods like the Thai food next door. Just the thing to quiet hot spices and blend with them in harmony.

2013 Sancerre (Daulny, Domaine Etienne)

Domaine Etienne Daulny, Sancerre, Loire Valley, France 2013

100% Sauvignon Blanc

PRETTY. SILKY, CITRIC, HERBAL & ELEGANT. PROFOUND!

Humble & profound. This goes for Etienne Daulny the man, and his wines. The wine, a Sauvignon Blanc from the village of Sancerre, could easily be mistaken for dozens of others on the shelf. When, in fact, it is carefully made with grapes from the most prestigious vineyards of this entire region. The man, quiet and smiling, doesn't say much. But when he does it is perfectly chosen, and followed by a nervous laugh. You want to hug him then drink his wine in a quiet room taking in the layers of depth and pleasure.

Serving Suggestion: Crottin de Chavignol or Valençay (fine Loire Valley goat cheeses.) The best raw oysters you can find.

2015 Sancerre Blanc (Bardin, Domaine Cedrick)

Cedrick Bardin, Sancerre, Loire Valley, France 2015

{sustainable} 100% Sauvignon Blanc

GRAPEFRUIT & SOARING FLINTINESS, DILL & WHITE ASPARAGUS, GOOSEBERRY

Cedric Bardin's tiny estate, which straddles both shores of the Loire river (one foot gently kicking up Poully-Fuisse and the other planted in Sancerre), is a source of some of these regions' most remarkable values. The domaine's two-hectare holdings in Sancerre account for less than 20% of its total production, allowing for an unparalleled focus on quality. Every trademark of classic Sancerre abounds in this wine - Sauvignon Blanc's fiercely bright and citrusy personality, the clearly defined flintiness of the region's terroir, and the sumptuous herbal complexities that we crave from these distinctive whites.

Serving Suggestion: Goat cheeses - especially those with bloomy rinds & edible ash. Deep fried softshell crab. Poached egg & asparagus w/ béarnaise sauce.

2013 Sauvignon Blanc (Stolpman Vineyards)

Stolpman Vineyards, Sauvignon Blanc, Santa Ynez Valley, California 2013

100% Sauvignon Blanc

FAT, EXOTIC & AROMATIC. QUINCE, APPLE, GRAPEFRUIT

With Stolpman’s wines, winemaker Sashi Moorman continues his tendency towards, hyper-modern winemaking. Two separate lots are made in different styles then blended together. The first 90% is fully ripe, juicy and rich due to low yields. It is made in stainless steel tanks. The remaining 10% from a different site is harvested much later, then whole berry fermented and aged on the skins in oak to add more texture and aromatics. Once blended, you get the exotic creature that you now see before you. Decadent and juicy!

Serving Suggestion: This uber-rich Sauvignon calls out for assertive fusion cuisine. Top scallops seared in sesame oil with a mango/red onion salsa and serve over a drizzle of pesto.

Altosur, Sauvignon Blanc, Mendoza, Argentina, 2015

CRISP & DRY WITH PASSION FRUIT & GOOSEBERRY

Hand harvested at high altitudes makes for an expensive tasting wine, but not necessarily expensive costing wine. Altosur continues to amaze us because they taste so good for so little money. This SB is dry, with balanced acidity showing passion fruit, pink grapefruit and limes. We love the complex hint of ginger on this one. Tropical, so put on the sun tan lotion while you sip. Great stuff for the sunshine.

Serving Suggestion: Shrimp, scallops and calamari- all together in a chilled seafood salad with lime zest and olive oil. Yum.

If Leo Hillinger is best known for any particular specialty, it’s probably his flamboyant reds. This stunning Sauvignon Blanc, however, is a zesty knockout! With a complex mineral/herbal character reminiscent of Pouilly-Fume or Sancerre emanating above a complex fruit cocktail of passionfruit, pink grapefruit, and spicy pineapple. it is lush and juicy at the same time with a long delicious finish.

Serving Suggestion: Surprisingly versatile. Fresh fish and shellfish, stir-fried vegetables, roast pork. It has a perfect affinity for Asian and South Pacific influenced dishes.

The pure-tasting wine made from those grapes is rich and silky, with subtle complexity from the ancient soils in which the vines grow (a former sea bed, riddled with oyster fossils). Chilean Sauvignon Blanc has increasingly become one of the most sought-after specialties of South America and frequently acts as a counterpoint to the lean, razory offerings associated with New Zealand's Marlborough. These often distinctly more tropical renditions owe their character to a warmer, drier climate. Picking the grapes slightly early, enough to capture the fruit character but without too much sugar, they partially ferment the tart juice to 9.5% alcohol leaving just enough sweetness to balance the green grape acidity. Diagnosis? Delicious! Tangy and quaffable, you can drink much more without getting tipsy. Eureka!! You better buy two bottles.

Serving Suggestion: Broiled skin-on chicken breast with honey mustard and raspberries over garlicky orzo.

2016 Sauvignon Blanc Wairarapa (Paddy Borthwick)

Paddy Borthwick, Sauvignon Blanc, Wairarapa, New Zealand 2016

100% Sauvignon Blanc

CANTALOUPE & MELON. RIPE PASSIONFRUIT. LYCEE & GOOSEBERRY. FRESH ACIDITY.

Having only 3% of land under vine and contributing only 1% of total production, Wairarapa is home to many of New Zealand’s smaller producers. This is where we find the Paddy Borthwick Estate. In 1985, Paddy, as a way to diversify his family’s legacy of farming (over 75 years!), decided to train as a viticulturist and winemaker. In 1996, after working across the globe perfecting his skills, he and his father began planting what came to be Borthwick Vineyard. This Sauvignon Blanc, with a wonderful balance of acidity and tropicality, is a prime example of what the sub-region of Gladstone has to offer. The alluvial soil found throughout the vineyard allows for smaller, more concentrated grapes, ultimately intensifying their flavor. In the end, a quintessential New Zealand Sauvignon Blanc!

Serving Suggestion: Grilled Spicy Grouper Tacos w/ Cilantro-Lime crema & Cotija Cheese. Fish & Chips. Grilled Asparagus wrapped in Bacon.

2016 Sauvignon de Touraine (Rochette, Domaine de la)

Domaine de la Rochette, Sauvignon de Touraine, Loire Valley, France 2016

{sustainable} 100% Sauvignon Blanc

GRAPEFRUIT & LEMON PEEL, FRESH GREEN PEPPER, CLASSIC SAUVIGNON BLANC

François Leclair and his son Vincent are in charge of Domaine de la Rochette, where four generations of fathers and sons have carefully tended 46 hectares of vineyards along the banks of the River Cher. Their Sauvignon Blanc is grown on flinty, clay-rich soil, which encourages an abundance of minerality in each sip. Lovers of Sauvignon Blanc from the Loire will not be disappointed in the bright grapefruit and green pepper notes and fresh, lengthy finish.

Serving Suggestion: Amberjack sashimi drizzled with ponzu and topped with grapefruit segments and thinly sliced green peppers.

2016 Sauvignon de Touraine (Plouzeau, Domaine)

Chateau de la Bonnelière, Sauvignon de Touraine, Middle-Loire, France 2016

100% Sauvignon Blanc

ELEGANT, DELICATE CITRUS & MAGNOLIA BLOSSOMS

Pierre Plouzeau began the process of returning the family lands - Chateau de la Bonnelière - to their origins: winemaking. His son Marc now runs the estate, pushing it towards organic viticulture. And he grows ethereally light Sauvignon; elegant, lean, and clean, with subtle aromas of citrus, white peach, and magnolia blossom, and finishing with hints of oceanic mineral and refreshingly light acidity. Vive Sauvignon!

Serving suggestion: A salad of spring greens, cold roasted asparagus, fresh chèvre, & seared scallops. Parmigiano-Reggiano & breadcrumb-crusted perch, pan-fried in butter and topped w/ fresh dill & a squeeze of lemon.

2013 Touraine Blanc "Le Petiot" (Ricard, Domaine)

Domaine Ricard, "Le Petiot" Touraine Blanc, Loire Valley, France 2013

100% Sauvignon Blanc

EXOTIC TROPICAL FRUIT, FLINTY, VERY PRETTY

Vincent Ricard is the latest generation (of many) to farm his 13 hectares of vineyards, but the first to make wine for sale under the family name. Instead of selling off his grapes to the local co-op, he makes small batches of exotic, impressive Sauvignon Blanc that would have only lost their character if they had been blended away at the co-op. This is a lovely, pretty wine that brings us great joy and is very easy to like!

Serving Suggestions: A wonderful wine with sushi and aged goat cheeses, particularly ones aged in ash.
