2015 "Colombulle" Rosé Methode Ancestrale (Colombière, Chateau La)

Chateau La Colombière, "Colombulle" Rosé Methode Ancestrale, Southwest, France 2015

{organic} 100% Négrette

RASPBERRY & WHITE PLUM, BREEZY SPARKLE, A TOUCH OF GRAPEFRUIT

Philipe and Diane Cauvin have essentially bridled the finicky Négrette grape into graceful submission with their catalogue of wines that seem to improve with each passing vintage. This is their newest offering, a delectably refreshing "petnat" sparkling rosé with pretty mousse that evaporates gracefully on the palate. A touch of ruby red grapefruit aroma adds serious depth. Great stuff. (slight sediment from the natural fermentation in bottle is harmless)

Serving Suggestions: Breakfast? I mean, you shouldn’t drink wine before noon, even on a Sunday, but seriously pair this with breakfast foods.

2010 Blanc de Blancs Brut (Huia Vineyards)

Huia Vineyards, Blanc de Blancs Brut

Marlborough, New Zealand 2010

100% Chardonnay

GOLDEN DELICOUS, TOAST & BEESWAX, PECTIN & PETROL

The cool-climated viticulture of New Zealand’s Marlborough most famously contributes the dialed-up Sauvignon-ish-ness to the region’s renditions of that famous grape, but it also helps other varieties hailing from colder parts of Europe to find voices similar to the ones they have back home. This Chardonnay-based bubbly takes on a combination of heightened acidity, orchard-ish tartness, and yeasty richness that would be perfectly at home in Champagne. An alpine-esque, petrolic tinge adds intrigue. Three cheers!

Serving Suggestion: Greenshell mussels w/ butter, Sauvignon Blanc, garlic, & lemon. Molten camembert w/ drizzled truffle-infused olive oil & granny smith apples on toasted bread.

This restrained and refreshing gem is made mostly from Viura, the dominant grape in “Cava country” or Catalonia, where it’s known as Macabeu, but this is not Cava country. In fact, Finca Torremilanos is the only producer in Ribera del Duero which has been entrusted with the ability to describe its bubblies as “Cava.” Pristinely pale with vaguely emerald undercurrents, its born among vines aging as many as 180 years and mixes a minerally zest through its citrus and orchard fruit.

From the Alt Penedes region of Catalonia, which is the highest elevation region where fine Cava is made, comes this serious but fun (serious fun!?!) Brut Nature. These are the driest of all sparkling wines. MINERALLY WHITE CHERRY & BRIGHT RED PLUM, DELICATE TEXTURE, LOVELY ACIDITY

By law, all Cava must be produced utilizing a secondary fermentation in the bottle - "Méthode Champenoise," but few in this price range warrant such close comparison to the singularly elegant wines of Champagne as this delicate and keenly generous rosé from our friends at Mas Codina. Bright, restrained, and finely textured, this is a profound and understated sparkler which exudes sophistication and balance through every fun, refreshing bubble. As is the case in many of the best rosé bubblies, here red fruit is nuance rather than star, allowing minerality, floral notes, and gentle citrus each a voice in this highly memorable and complex sparkler.

The Mestres family has worked the same 80 hectares for seven centuries, maintaining just as secure a grip on their traditions. Not only was Josep Mestres, in the first quarter of the 20th century, among the earliest pioneers in Spain's production of sparkling wine, he apparently is responsible for the coining of the term "Cava" as well, referring to the meticulous work and aging which occurs in the cellars or "caves" following harvest. This bold example offers an especially clear taste of the Xarel-lo grape, which shines brightly through the mature mousse.

Champagne Blanc de Blancs (Grongnet)

BOLD LIME, YEASTY & RICH, CHISELED BUT SOFT

This Blanc de Blancs (white wine]from white grapes – in this case, Chardonnay) is racy and very rich but still easy-going enough to serve as a sub for mystifyingly overpriced mega-production staples like Veuve Clicqout. Unlike the factory wines which dominate the world of Champagne today, this is handmade in minute quantities by a small, independent, family-owned vigneron. Mmmmm, the limey character and vibrant acidity are powerful and almost crystaline. Substantially more impressive than the refreshingly reasonable price might indicate!

From Champagne's southeastern outpost of Aube comes this lively bubbly of crystalline clarity. Of the impressive, non-Champagne areas that produce French sparkling wine under the name, “Crémant,” Alsace is perhaps the very most exciting. Arnaud Baur’s affinity for bubbly offerings has remained consistently and particularly impressive for us, and while this refreshing rosé may not quite rival its white counterparts in yeasty, Champagne-ish maturity, it more than rises to the occasion, stepping sideways and finding a fresher, more fruit-forward voice while remaining chiseled, very dry, and with traces of biscuity richness. Beautiful!

DELICATE MOUSSE, POMEGRANATE & WHITE CHERRY, GENTLE SPICE

Not far from Milan, Lombardy's Franciacorta region has provided Italy since 1967 with an official (and very eloquent) answer to France's Champagne. Viticulture has existed here, however, much longer. Today, both the grapes used and the methods employed are, by law, modeled after those of Champagne while guidelines and restrictions are, impressively, even more stringent and conducive to quality. In 1987, 20 years after the area's DOC status became cemented, a young Marcel Monzio Compagnoni founded the estate responsible for this elegantly subtle and intoxicatingly-perfumed bubbly.

Though small, the futuristic yet pastoral Steininger estate has become an iconic focal point for the northerly region of Kamptal. While Karl, Brigitta, and their daughters produce fantastic still wines, they've increasingly carved out a bold niche for themselves in the world of sekt (sparkling wine). One of eight different bubbly cuvées (most of which focus on single grape varietals), this regal Grüner Veltliner sekt is short on neither power nor elegance. Accompanying the fine beads of graceful bubbles trailing upward through the wine, aromas of pear, apple, and gently lime-like citrus emanate from the glass. Minerals and zesty acidity linger robustly on the finish. Fantastisch!

Serving Suggestion: Poached salmon salad w/ dill, beets, & arugula. Indulgent quiche w/ spinach, sweet peas, & lardon. Also bold, satisfying, and celebratory all by itself...

2015 Semi-Sparkling Orange Wine "Paleokerisio" (Glinavos, Domaine)

Domaine Glinavos, Semi-Sparkling Orange Wine "Paleokerisio", Ioannina, Greece 2015

Predominately Debina with a small amount of Vlahiko

SEMI-DRY SEMI-SPARKLER; DRIED APRICOTS & SPICE

Gather 'round, Greek geeks! This is a traditional semi-sparkling, semi-dry orange wine from Zitsa. Temperate climate and high altitude (up to 4,000 feet) helps preserve acidity - essential for any sparkling wine - in the native Debina grape. Suggestive of sweet dried apricots, a whiff of apple, baking spice, and a sherry-like oxidative quality ... and then along come the light bubbles and acidity to cleanse the palate. Clocking in at only 10.5% alcohol, it's light and refreshing, a great start (or end) to any meal.

Serving suggestion: Liver pâté w/ crusty bread & plenty of olives. Ricotta cheesecake w/ caramelized peach puree. Sitting on the porch swing on a cool fall evening, watching the leaves spiral down.

2015 Soave Spumante Brut (Monte Tondo)

Monte Tondo, Soave Spumante Brut, Veneto, Italy 2015

100% Garganega

PERFUMY PEAR & KIWI. BRIGHT, SOFT, DRY & CLEAN

Garganega, aside from sounding like one of Godzilla’s foes, is a grape you should get to know in all of its iterations. Most famous is the dry still wine of Soave, which beginning about a decade ago rocketed in quality and is now a go to wine for fans of aromatic dry whites and their versatility. This sparkling version is a great aperitivo!

Serving Suggestion: Tom Yum soup and related soups of south east Asian origin. Similar salads with spiciness, ginger, sour & salty and a bit of rustic funk.

2015 Txakoli Rosé Extra Brut (Ameztoi)

Ameztoi, Txakoli Rosé Extra Brut "Hijo de Rubentis", Getariako Txakolina, Pays Basque, Spain 2014

50% Hondaribbi Zuri, 50% Hondaribbi Beltza

TART PINK RASPBERRY & LIME ZEST, MONUMENTAL MINERAL, WAXY LEES

In the tradition of such classics as “Son of Godzilla,” the “Hijo de (son of) Rubentis” is a Méthode Champenoise sequel truly worthy of Amestoi's cult classic Txakolina rosé. In typical fashion, the grapes are harvested slightly underripe to hammer home the signature gleam of acidity, minerality, Atlantic-ness, and leanness that Guetarian wines are famous for. The full-on sparkle (rather than typical spritz) enhances the impression of body and complexity while doing nothing to diminish the characteristic refreshment we love. Txakolin-dantza!

Serving Suggestion: Shangurro (Basque-style stuffed crab) w/ red pepper flakes, black pepper, & white wine. Spider rolls & other soft-shell crab preparations.
