"La Garrocha," this wine's title, refers to a dance performed on horseback while wielding a 12 foot wooden pole - an activity which probably demands almost as much attention as does this Sherry. Deliciously indulgent, this marriage of golden roundness, delicate minerality, and subtle wisps of ripe fruit contains all of the characteristics that drive us to seek the essence of Amontillado. Edmundo Grant's family has consistently maintained their bodega for over one hundred and seventy years.

Serving Suggestion: Roast chicken thighs w/ garlic & crumbled blue cheese. Hearty gazpacho w/ Jamón Serrano, mushrooms, leeks, and cashews.

What were doing in 1987? Perhaps a bottle of sweet Montilla-Moriles (a close relative of Sherry) will help jiggle the memory free. Very rare indeed, this is purely hedonistic wine love. Nearly black in the glass, with syrupy, rich coffee/toffee, molasses, dates, figs and caramel, this is Pedro Ximenez aged for decades reducing it down to a rare treat. Wines like this come around like Haley's comet so grab a bottle now and savor it over time with small thimbles on weekends. Naw, forget that. Drink it with good friends in one evening.

Serving Suggestion: Best after dinner as a dessert on its own around a table where deep thoughts and contemplation/arguments are required about life, love and politics. Or try with plain cheese cake and buttery rich bread type desserts.

REFRESHING YET RICH...OCEANIC, ALMONDY PERFUME!

Brimming with an almond-like waxiness, savory mystique, and a powerful suggestion of salinity (without any actual saltiness, obviously), this is a wine that you may find yourself wanting to eat as much as drink. It’s perplexing, perhaps, that it can manage to be as clean as refreshing it is. This is the coveted conundrum of Fino! Completely dry and clocking it at a relatively gentle 15% alcohol, this isn’t as much an acquired taste as it is a friend you’ve always known you’ve had but haven’t yet had the pleasure of meeting.

Serving Suggestion: Marcona almonds are practically its soulmate. Seafood spreads (even our Carolinian Calabash stylings) are a dream.

The AOC Floc de Gascogne is relatively new, established in just 1990. The wine is used as an aperitif and made by blending 2/3 fresh grape juice with 1/3 brandy. In this case it is blended with Armagnac and both must come from the same vineyard. No fermentation occurs. After fortifying the grape juice to between 16% and 18% alcohol, it must be cellared for 10 months and then approved by committee from the appellation before being sold.

Serving Suggestion: Best used as an aperitif wine before dinner, or with a Foie Gras course and some people enjoy this after dinner.

From the seaside town of Sanlucar de Barrameda, the home of all Manzanilla, comes this small production sherry made by ninth generation cellar master Ignacio Hidalgo. Since 1758 the wines of his family have been blended off to larger houses such as Lustau, but starting in 1997 Ignacio started bottling his own artisan wines. This Manzanilla is a pure, more earthy style of the classic Spanish aperitif wine.

Founded in 1887, this bodega is renowned in the Sherry zone for producing some of the best dessert Moscatel anywhere. Making several styles, this one is the freshest and most citrusy. Fermented to 2% alcohol before being fortified with young brandy to 18%. The natural sweetness of the grapes remain, and the bright fruit becomes slightly spicy during its one year of aging in the Solera.

Serving Suggestion: Great as a dessert on its own, it brings a fantastic citrus flavor to your final course. Contrast it with dark chocolate desserts, or compliment it with Creme Catalan’s citrusy syrup.

If you've never had a sweet Pedro Ximenez, then you're missing out. Sometimes they can have flavors of molasses and honey, but this one leans more towards dried fig and spicy earthy flavors. This tiny sherry producer continues to make complex, monumental wines of great age at surprisingly reasonable prices (due to the unjust decrease in demand for these wonderful wines). Started in 1832, this is a wine to enjoy before the style goes extinct and the wineries defunct.

Serving Suggestions: Shoo-Fly Pie. Pour it over vanilla ice cream or even whip it into your vanilla-malt milkshake.

A regional French aperitif, made in the départements of Charente and Charente-Maritime in western France. Whilst popular in Charente, it is less well-known in other regions of France and somewhat uncommon abroad. It is a fortified wine, made from a blend of partially-fermented wine and Cognac eau-de-vie. According to legend, during the harvest of 1589, a winemaker accidentally added grape must into a barrel that he believed was empty but in fact contained eau de vie. The mixture was duly returned to the cellars for fermentation. A few years later, the barrel was retrieved and was found to contain the drink that is now associated with the region of Charente. The blend is aged for at least 18 months, including a minimum of 8 months in oak barrels.
