This sake is made in one of the few breweries that produces only Junmai Ginjo & Daiginjo grade sake. The owner, Masahiko Touda, is also the master brewer (toji), a rare dual role in today's Japanese sake industry.

Soft, honey-laced nose with just a tad of fruitiness. Dry overall, but with a sweet element creeping out of the background. Good richness and overall balance in a slightly dry profile.

Suitable for serving chilled or warmed, a rarity.

For this Shuzo (sake estate) founded in 1825, that special quality is the subtle complexity that is almost never found in standard Junmai (30% polished) sake. This is a sake of great balance, coming across as neither too alcoholic, nor too cloying.

Serving suggestion: Hirame (flounder) sashimi, Ama-ebi (sweet shrimp). Also, omelet with gruyere and chives.
