This richly textured and aromatic sparkling from Domaine des Herbauges is made in the Champagne style and echoes the world-famous beverage in terms of its plushness and yeasty aromas. Composed of 40% Melon de Bourgogne, 30% Chardonnay, and 30% Grolleau Gris, it retains the focused and transparent flavors of typical Loire valley whites while also showing a moderate florality and telltale biscuity notes from its 36 months spent on lees. 

Serving Suggestion: Caviar w/ all the fixins. Opulent brunch foods like eggs benedict & French-style omelettes w. smoked salmon.

Did you see that vintage?! Okay, the vines are 75-100 years old planted on a tiny 3 hectare plot in granite soils with pebbles. Get this, the wine is slowly stirred with lees contact in glass-lined tanks with a little propeller for 60 continuous months- unheard of! Legally this is TOO long to have "sur lie" on the label. This is possibly a once in a lifetime opportunity to taste such a complex wine made in a completely traditional/untraditional manner. The aromas are of goat cheese and gouda with citrus/orange blossoms and a golden honey funk. Man, this is crazy good wine.

Serving Suggestions: Goat cheese with age and a firmness; Yellow goat curry with potatoes, onions, carrots and sweet spices like clove and cinnamon.
