WHITE PLUM & QUINCE, DELICATELY EARTHY HONEY, BRIGHT ACIDITY

While the term, “Blanc de Noir,” is typically reserved for sparkling white wines made from red grapes, its application to still wine, like this one from the masterful mavericks of Burgenland’s Hillinger, is not unprecedented. On the one hand, this interesting white is almost as aerodynamic and contemporary as the “ICON HILL" bottle commissioned by the estate from futuristic visionary architect, Zaha Hadid, but there’s an ethereally earthy subtext interwoven in like mist through an Austrian forest – a delicious collision of old and new.

Serving Suggestion: Lightly-breaded char (or salmon...or trout) w/ parsley, white pepper, & tarragon. Herb-crusted chèvre & balsamic beet/arugula salad.

If Leo Hillinger is best known for any particular specialty, it’s probably his flamboyant reds. This stunning Sauvignon Blanc, however, is a zesty knockout! With a complex mineral/herbal character reminiscent of Pouilly-Fume or Sancerre emanating above a complex fruit cocktail of passionfruit, pink grapefruit, and spicy pineapple. it is lush and juicy at the same time with a long delicious finish.

Serving Suggestion: Surprisingly versatile. Fresh fish and shellfish, stir-fried vegetables, roast pork. It has a perfect affinity for Asian and South Pacific influenced dishes.

2015 Zweigelt (Hillinger)

100% Zweigelt

DEEP RED, SPICES & CHERRY, PINOT NOIR-ESQUE

Leo Hilinger brings us a beautiful version of Zweigelt [Zveye-gehlt]. This red grape was created in 1922 by crossing the Blaufrankish and St. Laurent vines. Today, this is Austria's most planted red grape vine. With a deep red color and a cinnamon, black cherry aroma, this soft tannin, fruity red is easy to drink and reminds us of a full bodied style of pinot noir. Leo employs both oak barrel and stainless steel tank aging to add just a little wood spice and dark chocolate in the mouth.

Serving Suggestions: Roast pork tenderloin with our own Hook's 1 year blue made into a blue cheese sauce; or one of Phoebe's savory cheese, bacon and veggie pies.
