WHITE PLUM & QUINCE, DELICATELY EARTHY HONEY, BRIGHT ACIDITY

While the term, “Blanc de Noir,” is typically reserved for sparkling white wines made from red grapes, its application to still wine, like this one from the masterful mavericks of Burgenland’s Hillinger, is not unprecedented. On the one hand, this interesting white is almost as aerodynamic and contemporary as the “ICON HILL" bottle commissioned by the estate from futuristic visionary architect, Zaha Hadid, but there’s an ethereally earthy subtext interwoven in like mist through an Austrian forest – a delicious collision of old and new.

Serving Suggestion: Lightly-breaded char (or salmon...or trout) w/ parsley, white pepper, & tarragon. Herb-crusted chèvre & balsamic beet/arugula salad.

Leo Hillinger's secco is a dry Pinot Noir rosé sparkling gem made in the same manner as Italy's Prosecco wines. The color is a pale ruby hue and shows light strawberry fruit on the nose. There's a touch of minerality that weaves through the finish and keeps the flavor alive for a long finish. This is ripe and elegant to drink with a creamy mousse and lively bubbles to the end.

Serving Suggestion: A companion to salmon cakes with remoulade sauce; with smoked chicken breast over spinach salad with a strawberry/balsamic vinaigrette.
