The best Saint-Estephes, however, temper their stern tannic structures with assertive black fruit, sumptuous earth, and distinctive herbaceousness that softens that edge, imbuing them with an impressive generosity. This essentially offering from Lavillotte provides us with just such an example of archetypal old-world Cab Sauv character, clay-like minerality, and wisps of bitter black chocolate. Serving Suggestion: Oxtail stew w/ pearl onions, shallots, & bay leaves. Roasted russet potato wedges w/ balsamic reduction & sage.
