The Mercurey region's name may evoke the silvery, semi-solid undulations of shape-shifting robotic weapons or one of the many reasons to avoid canned tuna (which you probably shouldn’t pair, in any case, with this wine), but it’s actually one of the most celebrated areas within central Burgundy’s Cote Chalonnaise. David Déprés works the 40-70 year old vines in the three acres of his small estate which fall within the Mercurey appellation to produce this elegant, vibrant, and ageworthy example of Pinot Noir. Firm yet fine in the tannin department and shimmering with cherry and plum, this is a wine which finds its very Burgundian mark somewhere between earthy intrigue and a freshness of firm fruit.

Serving Suggestion: Round roast w/ roasted plums & collard greens w/ thyme & garlic. Mushroom paté.
