Welcome to Daniele Saccoletto's world, where the DOC (Italian wine authorities, but not cool like us) doesn't matter. Extremely long fermentation times with natural yeast, followed by years of aging, result in some awesome, unique expressions of familiar Piemontese wines. His Grignolino is brick orange (a sure sign of a red wine with some years to it), with extracted plum, strawberry jam, stewed cherry, green olives and spice. Serious tannins are balanced by bright acidity, making this terrific with a wide range of foods.

Serving Suggestions: Pizza w/ olive oil, garlic, roasted red peppers and finocchiona salami. Porcini mushroom and rosemary risotto topped w/ sliced ribeye steak, Parmigiano Reggiano cheese and chopped chives.
