Viticulture has existed here, however, much longer. Today, both the grapes used and the methods employed are, by law, modeled after those of Champagne while guidelines and restrictions are, impressively, even more stringent and conducive to quality. In 1987, 20 years after the area's DOC status became cemented, a young Marcel Monzio Compagnoni founded the estate responsible for this elegantly subtle and intoxicatingly-perfumed bubbly. Serving Suggestion: Mild sashimi (Snapper or Yellowfin, for instance). Triple cream cheeses. Quiche w/ smoked trout, spinach, & a flaky, buttery crust.
