Philipe and Diane Cauvin have essentially bridled the finicky Négrette grape into graceful submission with their catalogue of wines that seem to improve with each passing vintage. This is their newest offering, a delectably refreshing "petnat" sparkling rosé with pretty mousse that evaporates gracefully on the palate. A touch of ruby red grapefruit aroma adds serious depth. Great stuff. (slight sediment from the natural fermentation in bottle is harmless)

Serving Suggestions: Breakfast? I mean, you shouldn’t drink wine before noon, even on a Sunday, but seriously pair this with breakfast foods.

NECTARINE & FUJI APPLE, CHAMOMILE TEA, LILY & LILAC

This adventurous blend from our friends at Fronton's Chateau La Colombière features a pair of grapes which aren't typically associated with the Fronton region, itself, but its closest neighbor to the east, Gaillac. Mauzac, a varietal whose reputation for excellent quality extends back into the sixteenth century, lends it's firm, apple-like flavors while the rarer Len de l'El grape asserts its dynamically floral perfume and waxy, oily richness on the palate. While not utterly traditional, this exotic cuvée showcases two of the Sud-Ouest's indigenous stars – ones that we don't get to taste as often as we'd like.

Serving Suggestion: Leek & cucumber salad w/ walnut, violet-infused vinegar, & fennel pollen. Soft, whole grain corn tacos w/ grilled fish, pineapple salsa, & pinto beans.

Fronton’s Chateau la Colombiere has long championed not just the traditional grapes of their corner of Sud Ouest France, but also the obscure ones. So it comes as somewhat of a surprise that this vintage skips the Mauzac and Len de l’El of previous years for Chenin and Sauvignon Blanc. Colombiere still puts their distinctive touch on this blend by adding 20% Bouysslet Blanc, a grape almost extict before they rescued it from a vine nursery. The Bouysselet adds just hint of waxy richness, while its partners bring snappy freshness.

Serving Suggestion: Claypot crab w/ brown sugar, sesame, & glass noodles. Tropical slaw w/ pineapple, mango, cilantro, & lime juice.

RIPE & LUSH. PEACH & PEAR WITH LEMONY ACIDITY

When Philippe and Diane Cauvin were researching the history of winegrowing in their local appellation of Fronton, they came across a grape they didn't know existed. Bouysselet, also called Prunelard Blanc, was previously thought to be the lost green-skinned sibling of the black-skinned Gaillac grape Prunelard. Having found a nursery which kept this vine alive for research purposes (but too little for winemaking), they had it propagated and brought back to life in their vineyard. This is the only Bouysselet in existence, farmed organically from a one acre vineyard, and it is a luscious phoenix of flavor!

Serving Suggestions: Lobster grilled rare with tarragon butter. Bay scallops, lightly seared topped with chervil and white pepper. Shrimp sashimi with ponzu.

Fronton remains one of Southwestern France's frontiers for wine lovers. Despite being situated less than half an hour from the city of Toulouse, the region keeps a low international profile. Its reds team with deep purple fruit and a wholesome spiciness which is striking yet understated. The Cuvée Réserve from Chateau la Colombière, an estate with a rich history of over 600 years, presents the region's Négrette grape in the starring role with support from a little Syrah.

Serving Suggestion: Stewed venison with tomatoes, red onions, and oregano. Punjabi goat curry with potatoes, cardamom, and coriander.

This is Diane & Philippe Cauvin's pure Negrette grape cuvee from a single parcel of vineyard with iron rich soils of pebbles, gravel and sand. The distinctive soil gives the wine a softer but more intense flavor of the Negrette grape, almost heightening its characteristics. This is the most pure expression of wine from Fronton, a standard by which others are measured!

Serving Suggestions: Cassoulet, the bean, pork, duck and sausage casserole of southwest France is a classic pairing, since they originate in the same region.
