While Southeastern Australia, where most Aussie wines hail from, is a Shiraz dominated land, Western Australia's magnificent Margaret River is one world's great regions for Bordeaux-inspired reds. This one is balanced and complex, firm in structure yet bright in fruit, while fourteen months in fine French oak gives this rich red wonderful accents of vanilla.  A great compromise between lush California Cabernet and a finely structured French one. Meticulous in quality since 1973, Woodlands examines and approves every individual grape on a sorting table before it earns a spot in this wine.

Serving Suggestion: Meat & potatoes - in an elevated style. Delmonico steak grilled over charcoal with pommes aligot (French way of saying potatoes w/ tons of cheese) & creamy greens.

Nugan Estate's "Third Generation" series is made in their state-of-the-art winery in Griffith, Australia. This is a delicious and amazingly balanced Cabernet showing fleshy currant, dried black cherry fruit, sandalwood, modest tannins and an elegant finish with a wisp of mint. The vanilla oak adds a third dimension, but is appropriately restrained so as not to hide the fresh fruit and earthy tones.

Serving Suggestion: Roast beef sandwiches dipped au jus; beef stew with carrots, potatoes and bay leaf or just for drinking on its own.

Let Western Australia change your mind. 100% barrel fermented but free of malolactic fermentation and only partially barrel aged, this bright Chardonnay has the most beautiful, subtle touch of oak. It is miles away in both distance and style from what you might be used to. 

Serving Suggestion: Classic dover sole with lemon, parsley and brown butter. Pappardelle with fresh garden peas in a light cream sauce, lemon zest, and mint.

In true Aussie spirit, a strong rivalry exists between the three neighboring towns in the local Australian Rules Football competition. Each year the winning team heads out to the vineyard to paint the tank in their team colors. Brief aging in French oak adds dimension, but the brevity means no real oakiness to be found. This is pure fruit driven Shiraz. So ripe, it might squirt juice if you squeeze the bottle too much. Glass staining purple-ness, strawberry and raspberry fruit, black licorice and freshness abound.

Serving Suggestion: Try this one with lamb chops marinated in rosemary and juniper berry or venison stew; Louisiana red beans and rice with Andouille.

This is produced in a traditional cask solera system.
